Bahamian Grilled Fish with Rocket Microgreens

This Bahamian dish features fresh fish fillets marinated in a flavourful blend of spices, grilled to perfection, and served with a side of rice and peas, garnished with fresh microgreens for a burst of freshness and nutrition.

  • Rocket Microgreens: Rocket microgreens have a peppery flavour with a hint of nuttiness. They add a fresh, bold taste and a crisp texture to the grilled fish. Rocket microgreens are rich in vitamins A, C, and K, as well as folate and calcium, providing an extra nutritional boost to the dish.**

Ingredients:


  • 4 white fish fillets

  • 2 tablespoons olive oil

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon cayenne pepper

  • Salt and pepper to taste

  • Rice and peas for serving

  • Handful of rocket microgreens for garnish

Instructions:


  1. In a bowl, whisk together olive oil, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.

  2. Brush fish fillets with the spice mixture, coating evenly and leave to marinate.

  3. Prepare rice and peas.

  4. Preheat grill or grill pan over medium-high heat.

  5. Grill fish fillets for 4-5 minutes per side until cooked through and flaky.

  6. Serve grilled fish hot with rice and peas.

  7. Garnish each serving with a generous handful of rocket microgreens or a rocket soup/sandwich topper before serving.
